1/2 honeydew, cut into bite size pieces
3/4 c. grapes
1/4 c. shredded coconut
1/4 c. water
3 T. honey
3 T. brown sugar
3 sprigs fresh mint (or 1/2 t. mint extract)
Combine water, honey, brown sugar, and mint in a small saucepan, bring to a boil. Reduce heat and simmer 10 minutes. Remove mint sprigs; chill 1 hour or overnight. Place melon and grapes in individual bowls; top with 1 T. mint sauce.
