Ingredients are listed in order of addition.
Mix the following and beat well:
3 eggs, beaten
1 1/2 cups buttermilk
1/2 cup canola oil
Combine in bowl and add to liquid:
1 1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
Dash cinnamon
Stir until well mixed.
Note: the batter should flow from the spoon, not plop. If needed, add more buttermilk.
We use a Vitantonio Premier Belgian waffler. Bake in a hot belgian waffle iron until crisp and golden. Serve hot with local maple syrup and butter.
